The Holidays and Commercial Refrigeration
The Holidays and Commercial Refrigeration
It’s that time of year again, time to gather the family and spend time together, especially around the Thanksgiving turkey. Most people don’t give much thought to how that delicious turkey got to the table nor should they, this is a time to focus on those you care about the most.
That said, there is a tremendous amount of work and planning getting that turkey to the Thanksgiving dinner table. So let’s take a look at how all that goes!
Commercial refrigeration plays a crucial role in Thanksgiving by ensuring food safety, quality, and storage for the large-scale preparations involved. It is essential for restaurants, supermarkets, and caterers to keep perishable ingredients like turkeys and fresh produce fresh. They also need to store large quantities of prepped food, and preserve leftovers. All of this while preventing foodborne illnesses. A reliable system prevents costly spoilage and ensures that the high-demand, perishable products needed for Thanksgiving feasts are available and safe.

- Food preservation: It slows bacterial growth, keeping perishable items like turkey, dairy, and fresh produce safe to consume and reducing food waste.
- Ingredient storage: Businesses use large commercial refrigerators and walk-in coolers to store immense quantities of ingredients and prepped food items before and during the Thanksgiving rush.
- Product quality: Proper temperature control maintains the intended flavor and texture of foods. Keepinging produce bright and flavorful to ensuring the turkey remains succulent and tender before cooking.
- Streamlined operations: In restaurants, refrigerated drawers and easy-access fridges allow staff to quickly and efficiently retrieve ingredients. This is vital for service during busy periods.
- Food safety compliance: It is critical for businesses to comply with health and safety regulations. Such as keeping all perishable foods at or below 41∘F41 raised to the composed with power cap F41∘𝐹 (5∘C) raised to the composed with power cap C5∘𝐶), and to prevent foodborne illnesses.
- Meeting consumer demand: Commercial refrigeration ensures that supermarkets and restaurants have fresh products available for the high-demand Thanksgiving season, which also marks a busy travel period.
Americans Love Turkey
Approximately 46 million turkeys are consumed on Thanksgiving in the United States, with nearly 90% of Americans eating turkey for the holiday meal. This accounts for about half of all whole turkeys sold in the U.S. annually. The total number of people eating turkey on this day is around 293 million.
This takes an estimated 16,600 truckloads to deliver all of turkeys delivered for Thanksgiving meals. This make sense since roughly half of all turkeys sold in the US are consumed on a single day, Thanksgiving.
From Farm to Table: A Journey
After the turkeys are processed, they enter the refrigerated part of the supply chain. This is crucial because raw meat is perishable. Refrigerated trucks, also known as “reefers,” are used to transport the processed and packaged turkeys from the processing plant to distribution centers. Ultimately these same trucks will deliver the birds to grocery stores or other retailers.
These ‘reefer’ trucks use a closed-loop cycle involving a compressor, condenser, and evaporator. These combine to circulate refrigerant and maintain a specific temperature, with some advanced units also offering features like controlled atmosphere (CA) to preserve freshness. Different from freezer trucks, ‘reefers’ maintain temperatures as low as 0°F generally keeping temperatures between 32°F and 39.2°F.
Some of these reefer trucks actually use the truck engine to power the commerical refrigeration unit, while others has a separate power supply.
Distribution Centers
Distribution centers rely on commercial refrigeration to store perishable goods like food, pharmaceuticals, and chemicals at specific temperatures. Commercial refrigeration systems are larger, more robust, and more complex than domestic units, designed for high-volume use and precise control to maintain product quality and safety in large-scale operations. These systems use a vapor compression cycle involving compressors, evaporators, and condensers to maintain low temperatures, with options like walk-in coolers, display cases, and specialized temperature zones for different products.
Distribution centers use industrial-scale commercial refrigeration systems. These usually feature rack systems with ammonia compressors to maintain various temperatures for products like groceries, meat, and dairy. These systems are designed for efficiency and can be customized for different needs. Sometimes as providing both sub-zero freezer sections and cooler storage is necessary keep different types of food at temperatures.

Rack Systems
These systems use multiple compressors working together, often sharing a common refrigerant source to provide cooling for different zones within the distribution center. Typically rack systems offer greater efficiency and flexibility compared to smaller, individual systems.
Ammonia Based Systems
Ammonia is a common natural refrigerant used in large-scale industrial and commercial refrigeration because of its efficiency. These systems often use ammonia screw compressors and can include features like evaporative condensers and extensive piping.
Designed to handle the high cooling loads of large facilities like distribution centers. These ammonia-based systems systems are very widespread in large-scale industrial and commercial refrigeration, especially within the food and beverage industry.
Their use is dominant in cold storage warehouses, meatpacking plants, breweries, and other food processing facilities due to their efficiency, low cost, and strong performance.
The Final Journey
Refrigerated trucks are used to ship meat by maintaining a constant cold temperature, usually below 40∘F. This is done to inhibit bacterial growth and spoilage. Key features include powerful refrigeration units, insulated boxes made of food-safe, antibacterial materials, and shock-absorbent designs to protect the meat from vibrations. Proper pre-cooling of the trailer, good air circulation, and careful loading to minimize temperature fluctuations are essential for food safety.

Enjoying the Holiday
People love Thanksgiving because it provides a time to focus on loved ones and appreciate the blessings the family received over the year. This is often the time when relatives who live apart, can come together and strengthen familial relationships.

This year when giving thanks, remember the tireless workers and drivers who helped make this very special meal a reality. Farm to table, these people work tirelessly so you and your family can forget everything except a delicious meal!
